PAX GMS 2021

Pax believes that “great wines can only be made from great vineyards”, which guides their highly selective decision-making process. Their goal is to produce wines with as little intervention as possible. I personally think that PAX makes some of the very best wines to come out of the Mendicino area.

The GMS is fabulous. A bright wine, this GSM captures all the natural vibrancy of the vintage. Crushed flowers, dark red cherry, plum, lavender, spice and grilled herbs are all front and center.

The philosophy at Pax is they believe that this classic combination of southern Rhone grape varieties is best enjoyed when they are not smothered in new oak flavors and weighed down with excessive alcohol.

The 2021 is very young but so approachable now.You could drink it tonight or put it in your wine cellar and give it some time.

Willamette Valley White Pinot Noir 2022

Made with Pinot Noir picked at peak ripeness and immediately gently pressed, this releases the free run juice without color or tannins from the grape skins, all to produce this unique wine expressing both red and white wine characteristics.

Notes of cherries and peaches make for a nice aromatic combination, while hints of Meyer lemon float in the background. A rich peach melba flavor is tempered by traces of wet granite and a lemon-lime twofer. A great white take on Pinot Noir that has some weight to go along with its creamy mouthfeel.

This wine will pair nicely with a plethora of seafood dishes such as seared scallops, halibut or Ahi tuna.
